GREEN TEA

The taste of green tea is closest to that of the original leaf on the bush. This is because no oxidation has taken place, which gives black tea its characteristic flavour. For many, green tea takes some getting used to, but the combination of fresh, spicy and vegetal notes offers many exciting flavours and a growing number of fans.

Tea, in a general sense, is made from the leaves of the Camellia Sinensis plant. Hot drinks made from other ingredients may not formally be called tea. We call these infusions. Examples are rooibos, herbal and fruit infusions.

The youngest leaves are always picked from the Camellia Sinensis shrub, namely the sprouting (needle-shaped) leaf and the two leaves next to it. This is called 'two-leafs-and-a-bud'. These freshly plucked leaves are then used to make black tea, oolong tea, green tea and fermented tea. Green tea is made by heating the freshly plucked leaves immediately after wilting and bruising. This is done in large wok pans or ovens in China and in Japan by steaming the leaves. Baked' tea has a more spicy, sweeter and fresher character and steamed tea more often associates with salty and vegetal flavours.
