WHITE TEA

White tea is the only tea made by drying the leaves of the camellia Sinensis plant immediately after picking. Preferably by air in the sun, but when the weather does not allow it, also in air-conditioned rooms. For a pure sanguine white tea, only the shoots from the tops of the tea plant are used. These buds have downy hairs that give the tea a white appearance. It is a very precious and delicate tea, characterised by a light infusion with a subtle perfume.

In practice, the fresh 'two leaves' are often added to give the tea more volume and make it more affordable. Of course, this is at the expense of the white colour of the dried leaf, but because of the typical drying process, the taste remains unmistakably subtle and delicate.

Tea is made exclusively from the leaves of the Camellia Sinensis plant. Extractions made from ingredients other than the leaves of the Camelia Sinensis plant may not formally be called tea. They are called, for example, an infusion of herbs or fruit. The youngest leaves of the Camelia Sinensis shrub are always picked, namely, the leaf that flares out (a kind of needle) and the two leaves next to it. This is called 'two leaves and a bud'. With these freshly plucked leaves, you can make black, oolong, green and fermented tea.

When the first leaves grow on the tea bush after the winter, they still have fine, downy hairs. They give these first shoots a white shine. The young leaves are picked within 48 hours and left to dry in the sun. This careful process provides a tea with a delicate flavour and many antioxidants.
