Filter coffee gives a pure representation of the wonderful flavours that can occur in coffee. For a while, the method was considered old-fashioned, but coffee lovers know better. Good coffee deserves the attention of the filter method.

 

The employees of Blanche Dael drink 'coffee from the filter' every day, and this brewing method will receive a lot of enthusiastic attention in the coffee café of the brand-new roastery in Maastricht.

 

With this brewing method, we recommend a single-origin coffee with a fruity or sweet taste. For example, try the Ethiopia Sidamo Organic (complex fruity), the Raja Batak (sweet spicy) or the Mocca d'Afrique (fruity sweet).

 

WHAT IS A HARIO V60?
The Hario V60 is a Japanese filter carrier in the shape of a V and at an angle of 60 degrees, hence the name V60. The filters are available in plastic, glass, porcelain or metal. Our baristas get the best results with a porcelain filter.

 

In these simple steps, you can make the tastiest hand filter coffee:

1. HEAT THE WATER

Heat the water. Make sure the water does not reach the boiling point. The ideal temperature is 90°C. Allow about 30 grams of coffee for half a litre of water. 

2. GRINDING FRESH COFFEE

Grind the fresh Blanche Dael coffee with the coffee grinder. Choose a grind between medium and a slightly coarser grind. Do you not have a coffee grinder? We grind the coffee to the proper grind just before dispatch. Choose the option 'filter grinder' when selecting.

3. RINSE THE FILTER

Place the filter paper in the filter and place it on a mug, cup or glass coffee pot. Rinse the filter well with hot water. This rinses away the taste of paper and warms the filter. Allow to drain briefly and then discard the water.

4. PLACE THE FILTER ON THE SCALE

Place the hand filter on the mug, glass coffee pot or cup and then on a scale. Set it to 0 with the tare function. Then pour the coffee nicely into the centre of the rinsed filter until the scales indicate the correct grammage. Then set the scale to 0 again.

5. ‘BLOOMING’

Next, start to bloom the coffee. This is the swelling or swelling of the ground coffee. For this, pour a little water over the coffee. Just enough until all the coffee is wet, and let it bloom for 20 to 30 seconds. This ensures an optimal aroma.

6. CIRCULAR POURING

Now gently pour the water at 90°C over the coffee in circular movements. Make sure that the water remains about 1 centimetre under the edge of the filter. Do not let the coffee bed dry out, but keep repeating the circular movements until you have reached the right grammage. For example, if you use 30 grams of coffee, pour 500 grams of water over it.

7. SERVE & ENJOY!

Now enjoy a delicious coffee from the hand filter! Before serving, shake all the coffee gently in the glass pot or stir it with a spoon. Then, for the best taste, serve the coffee in a pre-heated cup.
